This blueberry baked oatmeal is a stick to your ribs kind of breakfast. It’s healthy, filling and tastes great! It reheats well so it can easily be made ahead of time making it the perfect way to fuel your body on a busy weekday morning!

Easy Blueberry Baked Oatmeal

We know breakfast is one of the most important meals of the day. A meal that fills you up and gives you energy for the morning is the perfect start to any day! As much as we like oatmeal, we LOVE baked oatmeal and this recipe tops the list.

Making baked oatmeal is really easy, we just combine oats, eggs and almond milk (or traditional milk) with fresh fruit or berries.

With all of that goodness going into this baked oatmeal, I try not to load it up with added sugar so in this recipe I use SPLENDA® Stevia Sweetener. This no-calorie sweetener is a plant based sweetener, and gets it its sweetness from the stevia leaf. I love it because not only does it taste great, it contains no added flavors or colors, no preservatives, and only non-GMO ingredients and it has no bitter aftertaste.

A hint of cinnamon and a splash of almond extract really make this breakfast sing!

Once it’s all spread into the pan, I add some extra blueberries on top making sure every bite is bursting with flavor.

When I make desserts that contain fruit, I often top it with a delicious streusel topping.  A streusel topping is a sweet and buttery crumble sprinkled on top (almost like you would put on top of a  Berry Crisp) and baked until golden.

I love to add oats and nuts (or coconut) to my streusel topping for extra flavor and a little bit of crunch.

For breakfast, we serve this baked oatmeal with a splash of cream or milk and extra fresh blueberries.

Can you bake oatmeal?

Yes!! You can definitely bake oatmeal and if you’ve never tried baking it you’re in for a real treat.

Oats are such a great breakfast, they’re perfect served cold as Overnight Oats or in Apple Cinnamon Oatmeal but best of all is baked oatmeal!

The texture is different than a regular oatmeal boiled in a pot as the oats hold their shape better.

Can you freeze baked oatmeal?

Baked Oatmeal can be prepared and frozen before baking.  To cook, remove from the freezer and defrost in the fridge overnight.  Bake as directed.

This blueberry baked oatmeal recipe makes 9 servings. It’s a great breakfast to make on a Sunday morning and enjoy throughout the week. It reheats perfectly in the microwave to enjoy for breakfasts all week long.

If you’d like to keep it longer, I would suggest cutting it into servings and placing each serving in a freezer bag.  In the morning just remove one serving and heat on 70% power until heated through.

What is the Difference Between Quick Oats and Old Fashioned Oats?

This recipe uses Old Fashioned Oats.  There is a difference between quick oats and old fashioned oats so you’ll want to make sure you’re using the right variety.

Whole oats are rolled flat to create Old Fashioned Oats where as Quick Oats are cut into smaller pieces so they cook faster.  The smaller pieces of the quick oats soak in more liquid and don’t hold their shape as well in this recipe.

Changing the oats will change both the cooking time and texture of this recipe.

Blueberry Baked Oatmeal

The goodness of oats combined with juicy blueberries and protein-packed almonds all lightly sweetened and baked into a delicious family favorite breakfast!

Cook Time 40 minutes

  • Preheat oven to 350°F. Grease a 9×9 baking pan.

  • In a large bowl combine oats, sugar, cinnamon, almonds, baking powder, and salt.

  • Add in eggs, almond milk, butter and almond extract. Mix well.

  • Fold in ¾ cup blueberries and pour the oat mixture into the prepared pan.

  • Top with remaining ½ cup blueberries.

  • In a small bowl, combine the topping ingredients and mix until large crumbs form. Sprinkle over blueberries.

  • Bake for 35 – 40 minutes.

Almond extract can be substituted with 1 teaspoon vanilla extract. If desired, 1 ripe mashed banana can be added to the wet ingredients.
Almond milk can be replaced with regular milk or soy milk.
For serving, drizzle with cream, milk, or add a dollop of Greek yogurt.
Store leftover oatmeal covered in the fridge for up to 3-4 days. Drizzle with a little bit of water and reheat in the microwave or oven.
